Palm pretzels to bake at home

In the Wilder Kaiser area and at our hotel for your summer holidays in the Alps, we honour lots of traditions on Palm Sunday, the Sunday before Easter: The last person to get out of bed is crowned the “palm donkey” and the colourful palm bushes that children have spent the last week making and decorating are given the finishing touches – palm pretzels – before being carried to the church to be blessed.

If you’d like to join in at home, here’s our recipe to bake your very own palm pretzels:

Ingredients for approx. 20 palm pretzels:

  • 1kg spelt flour
  • 1 cube of yeast
  • 1 tbsp. salt
  • 70g melted butter
  • 80g sugar
  • 0.5l lukewarm milk-water mixture

Combine all the ingredients and leave the dough to rise. Divide the dough into pieces each weighing around 20g. Roll these into cylinders around 30cm long, twist them into pretzel shapes, and bake them in the oven at 180 to 200°C until they turn golden brown. Our kitchen team hopes you have fun baking them – and eating them afterwards!
