Yeast-dough bunnies to bake at home

How do you celebrate Easter? How about a delicious Easter brunch?

At Easter brunch here at our hotel on your family vacation in Austria, one absolute must (as well as the colourful Easter eggs) is our traditional baked treats. Here’s our Easter recipe tip for families to try at home.

Ingredients for yeast-dough bunnies:

  • 20g yeast
  • 125ml milk
  • 250g flour
  • 35g sugar
  • 50g melted butter
  • 1/2 tbsp rum
  • 1 pack vanilla sugar
  • 2 egg yolks
  • 1 pinch salt

Plus:

  • 1 egg for brushing
  • Broken spaghetti for the whiskers
  • Raisins for the eyes and nose

To make the starter dough, stir the yeast and two tablespoons of flour into the lukewarm milk. As soon as the starter has doubled, add the remaining ingredients and knead it into a smooth dough. Cover the dough and leave it to rise for another 30 minutes or so until it has doubled in size again.

Cut the dough into five pieces, shape them into bunny heads, and place them on a baking tray. Use around a third of each piece of dough for ears and place them under the heads. Decorate the heads, brush them with egg, and then bake them for around 20 minutes at 170 to 190°C.
